2 oz Barr Hill Gin
0.5 oz Fresh Lemon
0.5 oz Raw Honey Syrup (2:1)
Fresh Apple (not a very sour variation)
In a mixing tin, muddle 3 or 4 dice sized apple pieces along with 1 or 2 sprigs of thyme and the honey, add other ingredients and ice, shake well, strain into a cocktail glass. Garnish with a slice of apple and a sprig of thyme.
