The Dispersion Diversion
In chemistry a “dispersion” refers to evenly mixing one material into another. When gas is dispersed into a liquid it is called foam, when a solid (like coffee) is dispersed into a liquid (like water) it is called suspension, and when a liquid is dispersed into another liquid it is called emulsion.
- 1.5 oz Tom Cat Gin
- 1 oz Sweet Vermouth
- 0.75 oz fresh Pineapple juice
- 0.5 oz fresh Lime juice
- Pineapple juice foam
- Garnish with a fresh strawberry
In a shaker filled with ice, add Tom Cat, Sweet Vermouth, and pineapple juice. Shake vigorously. Strain into a coupe, add fresh strawberry. Vigorously shake pineapple juice until it foams on top. Spoon off foam and delicately place on the surface of this drink.
