Chef

Location: Montpelier, VT

Caledonia Spirits is looking for a Chef to help visualize and create our scratch Small Plates Program!  We are looking to create fun, nostalgic and delicious small plates to pair with our world class cocktail program.  You will be in charge of working with local ingredients and farmers to help create fantastic seasonal delights to blow our guests away.  You will also be in charge of creating recipes, prepping dishes, alerting of allergies and cross-training staff to help plate your menu, as well as maintaining food inventory, food ordering and receiving, maintenance of quality standards, sanitation and cleanliness, and execution of service.  Role reports to the General Manager.

We are offering very competitive pay, benefits, and great hours for a chef (normally two consecutive days off and out by about 9 PM at the latest!)

  • Stock and maintain sufficient levels of food products at line stations to support a smooth service period.
  • Manage inventory and purchasing of all food products and supplies.
  • Create a small plates menu from scratch that is able to be prepared and executed in our kitchen.
  • Provide menu of available small bite options for parties and private events that our event coordinator can advertise.
  • Prepare food during off-peak periods as needed, to help ensure a smooth work week.
  • Close the kitchen following designated procedures.
  • Attend all scheduled employee meetings and offer suggestions for improvement.
  • Coordinate with and assist fellow employees to meet guests’ needs and support the operation of the Bar.
  • Consult with the Bar Manager to plan menus, taking into consideration factors such as costs and special event needs.
  • Coordinate and supervise work of Line/prep cook.
  • Knowledge of point of sale software.
  • Ideally serve safe certified.

Line Cook

You will also be in charge of following Chef’s recipes and assisting in future recipe creation, prepping dishes, plating the menu, as well as helping maintaining food inventory, assisting in food ordering and receiving, maintenance of quality standards, sanitation and cleanliness, and execution of service. Role reports to the Chef and Bar Manager.

Hospitality Manager

Location: Montpelier, VT

Caledonia Spirits is looking for a Hospitality Manager to oversee the preparation and execution of bar service. It is the responsibility of the Hospitality Manager to oversee the preparation and execution of bar service at Gin Lane;  to train and lead the bar, servers, support and kitchen teams at Gin Lane; assist and collaborate with retail, events, tastings, marketing, and tour teams to increase traffic and revenue; and to maintain bar cost margins.  The Hospitality Manager ensures the best possible guest experience by overseeing that all steps of service are achieved, that the ambience is welcoming, and that the products delivered are truly outstanding.

Key Functions and Responsibilities

Daily Responsibilities

  • Keep the bar menu up to date.
  • Run regular bar meetings.
  • Lead a pre-shift meeting before each service, oversee service, and report on service, as required.
  • Manage bartenders, servers, and hosts.
  • Coordinate training of bartenders, servers, and hosts.
  • Keep updated files of opening and closing checklists, side work, instruction cheat sheets, inventory sheets, recipes, and educational materials. Store printed copies in a readily accessible location.
  • Oversee set-up and implement training materials for POS, reservation, music, table placement, and lighting.
  • Oversee reservation systems and implementation.
  • Work collaboratively as needed with GM, Tour Program lead, Event Manager and Retail Manager.
  • Ensure that event guests are greeted by a member of the hospitality management team.
  • Enter all end of night tips in accordance with protocols.
  • Check invoices, enter them into our accounting system, and collaborate with the accounting team to code each invoice properly.
  • Ensure the bar and bar areas are prepared for service daily from the perspectives of brand presentation, cleanliness and safety.
  • Close and lock the building.

Long Term Goals and Responsibilities

  • Regularly update the Bar Manual section that is assigned to the Bar and Hospitality Manager.
  • Provide oversight of Lead Bartender(s); approve all schedules, orders, cocktails, garnishes, changes to any aspect of  the bar program as recommended by the Beverage Director.
  • Approve of and document any compensation changes in consultation with human resources.
  • Oversee inventory of bar programs in conjunction with bar lead and bartenders, keep accurate reports of inventory and report inventory  on a monthly basis to the accounting team.
  • Maintain inventory of tableware, glassware, service ware, to-go containers and uniforms.
  • Assist GM of Hospitality and HR in hiring of new employees as needed.
  • Approve timecards and adjust time as needed (missed punches).
  • Ensure staff schedules are prepared in a timely manner (at least three weeks in advance).
  • File employee certifications and licenses.
  • Implement usage of employee handbooks, service training materials, employee reviews.
  • Meet regularly with members of the team to identify proficiencies or enrichment opportunities.
  • Provide mentorship to the hospitality team by defining and demonstrating all aspects of the bar program through research, experimentation and implementation in conjunction with GM
  • Contribute to the planning and forecasting process in collaboration with other hospitality management team members.
  • Maintain accurate cost of goods and adjust menu prices as needed.
  • Ensure the best possible guest experience while also keeping within budgets for ingredients and labor.
  • Contribute information, insight, and ideas to the marketing teams to promote the hospitality program.
  • Respond to reviews, collect guest feedback, and encourage guest satisfaction.

Landcrafted Apprenticeship and Landcrafted Internship – Seasonal

Location: Montpelier, VT

Caledonia Spirits, the distillery behind Barr Hill Gin & Vodka and Tom Cat Gin, is looking for candidates for our Landcrafted Employment Enrichment Program (LEEP). This is a 6 month paid position at our distillery in Vermont, ideal for recent college graduates or those looking to change career paths. Candidates will choose an area of focus in either Hospitality and Bar, Production, or Sales and Marketing. All candidates will participate in weekly cross-learning experiences, such as distillery tours, farm and vendor visits, bartending and cocktail training, public relations, laboratory research, and much more. Server

Location: Montpelier, VT

The Full-Time Server works closely with all Hospitality departments to ensure a great customer experience, with a primary focus on providing engaging, knowledgeable and professional service. This position’s primary function is greeting and assisting customers, Server service, table maintenance, processing payments and assisting the team with executing our food and beverage offerings on premise. In addition to helping with all key functions to maintain a clean and organized space: busing, dishes, stocking and daily cleaning projects.

  • Continually monitor and assess general safety and COVID best practices within the Hospitality spaces and outdoor guest areas (including parking lot), consult with staff and/or other management to effectively respond to and proactively address safety concerns according to proper/established protocol.
  • Operate within health and safety and Vermont DLC compliance requirements.
  • Respond to customer or team concerns with respect and with the intent to fully resolve the issue(s) of concern; report significant issues to management according to established protocol.
  • Maintain knowledge of the company’s products, distilling practices and history, and share the story of the brand with customers.
  • Assist with set-up, clean up, serving, preparing food and other tasks as necessary for on-site and off-site events.
  • Complete other projects and perform other duties in support of the company goals and objectives, as requested.
  • At least one year of serving experience is preferred.
